Fried Rice

Ingredients

bullet1 cup rice
bullet2 tsp olive oil
bulletfried almonds or peanuts (optional)

Preparation

Heat oil in pan. Add a cup of rice and fry for 5 minutes, stirring constantly to prevent burning. Add two cups of water and bring to a quick boil (add some salt to taste). Let it boil for more or less 7 min. till the water gets at the level of the rice and it starts making small vulcanos. Cover tightly and lower the fire to very low. Let it simmer for 25 min. or till it is done. Fluff with a fork and serve. You may add fried almonds or peanuts.
